Kashubian Strawberry
Tasting dinner at Sztuczka
A short season. A regional product. The Kashubian strawberry in a menu built on the summer flavours of Pomerania.
This is how the Kashubian strawberry tasted
The evening is behind us. The Kashubian strawberry, protected by an EU geographical indication, led the entire menu: from gazpacho, through scallops and lamb with cherry, to the Kiełpinianki pierogi and a choux with roasted-hay cream. Guests were welcomed by Sebastian Klamka, and the evening was hosted by Tomasz Podsiadły.
There was a Kashubian accent too: Ryszard Kalkowski, mayor of the Szemud municipality, dressed in traditional costume, treated guests to snuff tobacco. At the end, every guest received a punnet of Kashubian strawberries and preserves from Wojciech Klein. The dinner was held under the patronage of the Pomeranian Regional Tourist Organisation and the Pomorskie Prestige project.
Today we are celebrating the Kashubian Strawberry. The whole menu is built on it, so the strawberry will run through the dishes in different forms, from ferments and a chilled soup all the way to dessert. I invite everyone to the table. Sebastian Klamka, opening the evening
“Sztuczka has once again shown that it is a place where cuisine meets history and locality,” Trojmiasto.pl wrote about the evening. read the article on Trojmiasto.pl (in Polish)
The strawberry as the starting point for the entire dinner
On 10 July the Kashubian strawberry led the whole evening at Sztuczka. We showed its sweetness, acidity and aroma across the courses. Sztuczka’s kitchen, a certified Kashubian Strawberry grower and the „Kiełpinianki” Rural Housewives’ Association from Kiełpino met at one table.
The strawberry in the language of fine dining
The Kashubian strawberry is here only briefly. It has its origin and its character. That evening we treated it with respect for the region and freedom of interpretation on the plate.
The guiding fruit was the Kashubian Strawberry / Kaszëbskô malëna, tied to the region and its culinary identity. We used fruit from Wojciech Klein, a Kashubian Strawberry grower, showing it as part of local heritage.
People, produce and Kashubian tradition
We showed the strawberry from two perspectives: an original tasting kitchen and local tradition.
Wojciech Klein
Wojciech Klein showed the strawberry’s journey from field and harvest to the plate. Thanks to him, the product had a real origin, history and regional character.
The „Kiełpinianki” Rural Housewives’ Association from Kiełpino
The „Kiełpinianki” Rural Housewives’ Association brought a local, Kashubian perspective. Their traditional strawberry pierogi appeared on the menu alongside Sztuczka’s tasting cuisine.
chefThe dinner was prepared by the Sztuczka kitchen team led by Sebastian Klamka. The evening was devoted to a single product and its possibilities in a tasting kitchen.
